Tajima beef, the famous beef of the Tajima region of Hyogo Prefecture, where Yumura Hot Springs is located, is the main ingredient in this kaiseki meal plan.
Did you know that the world-famous "Kobe Beef" is "Tajima Beef" that has passed the strictest standards in the world?
Because of its high quality and meat, Tajima beef is also used to breed Matsuzaka beef, Omi beef, Maezawa beef, Hida beef, and so on.
Tajima cattle are carefully raised in a quiet, stress-free environment surrounded by abundant water and greenery.
Tajima beef has little subcutaneous fat and is characterized by the perfect balance between lean meat and fatty taste, making it melt in your mouth.
Tajima beef can be enjoyed at dinner in four different ways: grilled on a ceramic plate, roast beef, shabu-shabu (or sukiyaki), and seared sushi.
Appetizers are handmade with an emphasis on the seasonality of each month, and dishes are also handmade in our kaiseki cuisine.
For breakfast, we also offer a Japanese-style meal that includes "Kumi-tofu" (pumped tofu) made with thick soymilk from the hotel's own special recipe, grilled local Karei (Sardines), and handmade "Dashimaki-Tamago" (Rolled egg) from the chef's kitchen.
