What is "Echizen Crab"?
The highest grade of male snow crab caught off the coast of Fukui. Thanks to the unique terrain of the Echizen coast where warm and cold currents meet, these crabs grow in nutrient-rich waters, resulting in unparalleled quality. Since 1910, Echizen Crab has been the only crab presented to the Japanese Imperial Family as a gift.
What is "Mizu-gani"?
A local treasure rarely found in general markets due to its delicate nature. These are crabs that have recently molted; they are prized for their soft shells and incredibly juicy, tender meat. "Mizu" means water, reflecting the refreshing sweetness and succulent texture that can only be experienced here in Fukui.
