■ Stay LOOP ■
LOOP is a "hotel where you can enjoy wine". It is also a place where you can find your favorite wine. We offer a lineup of wines from Yoichi, grown and brewed in the climate and soil of Yoichi, as well as the finest wines from France and Spain. You can enjoy wines selected by a sommelier who knows wine inside and out and has served in Michelin-starred restaurants in Ginza and Aoyama for 11 years in France. The food served will be made with ingredients from Yoichi that are perfectly matched with the wine. Our chefs, who have honed their skills in Michelin-starred Japanese, French and Spanish restaurants, will use their inspiration to create dishes that make the most of the ingredients.
At LOOP, we hope you will enjoy the wines and food from Yoichi to your heart's content. Please take your time and relax.
■ Yoichi, a treasure box of food ■
Also known as the Scotland of Japan and a mecca for whiskey, Yoichi in Hokkaido is characterized by its rich nature, crisp air, and the clear meltwater from the vast mountains. It is a place blessed with seafood as well as vegetables and fruits. In recent years, it has also been discovered that the soil, topography, and climatic conditions are suitable for winemaking, and many wineries have been established there, earning high praise from around the world.
■ Takashi Kuratomi ■
Takashi Kuratomi (Service Manager/Sommelier)
Graduated from the Toulouse Hotel Culinary School
He moved to France alone at the age of 17. He started his career in the service industry at "La Terrasse" in La Rochelle, a port city in the southwest of France. He stayed in France for 11 years, experiencing authentic food and wine, and it became his second home.
After returning to Japan, he had the opportunity to pursue a career as an actor and performed on the stage of the "Ichikawa Ennosuke" school's classical kabuki and super kabuki.
In 2005, he returned to the restaurant service stage when "Benoit Tokyo", the second Alain Ducasse restaurant in Japan, opened. After that, he was involved in the launch of Ginza "Thierry・Marx" and continued his career.
His true strength is creating a unique space while maintaining the esprit of French language and entertainment. He has been in his current position since 2020.
■ 3F Hotel Area "Brewing Grapes" ■
The theme of the floor, which imitates a wine cellar, is "Brewing Grapes". Grapes with abundant sugar and acidity on the vines are carefully harvested, the branches are removed, the juice is squeezed, and the grapes are fermented and aged in wooden barrels where natural yeast is easily activated. Once fermented and aged, they are bottled, and then the wine matures through secondary fermentation in the bottle. Please feel like you are a precious grape, relax in the wooden shelf-like tatami room, and rest as if you are slowly aging with the wine.
■ 2F Hotel Area "Cultivating a Vineyard" ■
The theme of this casual floor is "Cultivating a Vineyard". The image is of the process of clearing and developing the land, systematically erecting the supports, planting grape seedlings, and guiding them vertically with wires. Our vineyard in Asahidai, Niki-cho was originally overgrown with trees and grass like a primeval forest. We cut down the trees, cut the grass, developed the land, and cultivated the field.
We hope our guests will feel like pioneers of the farmland, and relax with a glass of wine in a simple, inorganic room with a shower and bed like a farm equipment shed, and exposed floors and ceilings.
