Savor the legacy of a Registered Intangible Cultural Heritage in a single evening. To celebrate the official registration of Kaga Cuisine as an Intangible Cultural Heritage this year, we have refined our seasonal "Spring Delights Kaiseki" to showcase the very best of this culinary tradition.
A symphony of tradition and seasonal freshness. Our menu centers on three iconic Kaga masterpieces: Nodoguro Sugatadani (steamed rosy seabass), Hasu-mushi (savory steamed lotus root), and the classic Jibuni duck stew. These are artfully paired with the finest seasonal ingredients.
A moment of timeless harmony. We invite you to relax and immerse yourself in the authentic flavors of Kaga, where centuries of tradition meet the fleeting beauty of the season.
【Culinary Highlights: The Essence of Kaga】
Nodoguro Kara-mushi (Steamed Rosy Seabass): A luxurious twist on the traditional sea bream dish. This fatty, premium fish is steamed to a fluffy perfection and served as a delicate appetizer in a savory dashi broth.
Hasu-mushi (Steamed Lotus Root): A signature Kaga dish. Enjoy the gentle texture of grated lotus root perfectly harmonized with a refined, starchy sauce (ankake).
Jibuni (Traditional Duck Stew): The most iconic Kaga specialty. Thickened dashi, tender duck, and sudare-fu (wheat gluten) are served in authentic Wajima lacquerware, warming both your palate and soul.
Wild Vegetable Tempura: A seasonal treat capturing the fresh aroma of spring. These mountain riches are lightly fried in a crisp batter to complement the deep flavors of Kaga cuisine.
【Dining Experience】
Meals are served course-by-course at a comfortable table with chairs.
Your dinner will be served in a private dining room or your guest room (assigned by the inn), ensuring a dedicated space for your exclusive use.
【Hot Springs: The Healing Waters of Tatsunokuchi】
The "Okami's Method": Our proprietress recommends alternating between the 36.5°C natural spring bath and the adjacent 40°C large bath to improve circulation and relieve fatigue.
Variety of Baths: Enjoy our "Mokusei" (cypress) and "Gyokuryu" (rock) scenic outdoor baths.
Private Open-Air Bath "Raicho": Available for 50 minutes per session (advance reservation recommended).
【Japanese Garden】
Our garden features "Shousen-ko" pond and a traditional tea house. You can observe wild birds and seasonal beauty: Cherry blossoms (Spring), Lotus (Summer), Crimson leaves (Autumn), and Snowscapes (Winter).
【Service & Logistics】
Stay: 19-hour stay (Check-in 15:00 / Check-out 10:00).
