Both offer an elegant, deep flavor.
These two carefully selected varieties are prepared as shabu-shabu in Chef Ogura's special broth.
The broth, infused with the fish's umami, creates an exceptional taste alongside the fish.

■□Yugo Onsen□■
Yugo Onsen is one of the “Three Hot Springs of Mimasaka, Okayama Prefecture,” renowned as the premier hot spring village in the Chugoku region.
Legend has it that the great Tendai Buddhist monk Jikaku Daishi discovered these waters during the Heian period, guided by a white heron.
Hence, this celebrated hot spring is also known by its alternate name, “Heron Hot Spring.”
It is also popular among women as a hot spring renowned for its skin-beautifying properties.
Experience Yugo Onsen at the spacious “Daikei” and “Asakei” bathhouses—among the largest in the prefecture—
and the garden open-air baths: Yurari's “Shirasagi no Yu” and “Hotaru no Yu.”
